Yes, I recognize that I got quite good genes when I was born ! Unfortunately, because of my early and carefree addiction to sugar when I was a child, for many years I suffered with very painful digestive problems. When you are 5 years old, it is not fun to be sick every time you eat one French fry or one square of chocolate !... I finally healed myself, mostly by empirically learning what food was good and what food was bad for me.
My Mother was a home-economics teacher, so I was often "in the kitchen" watching her cooking; she was mainly preparing just inexpensive, simple meals in advance so that my brother and I could heat them up while she was teaching.
In the 70s there was not so much advertising about convenient food on TV, at least never like in America (this was in Switzerland) but I already had the opportunity to observe the manipulation of some of the big companies in the food industry; they were giving my mom, a home maker and a teacher, all kinds of new and processed food products to use with her young students; she was accepting these new concepts because she was on a very tight budget with school. Later on I found out how for example the food managers of the public schools and clinics were manipulated to sign big food contracts as well
When I was 18 years old, I was bored at College studying dead languages so I found my way to the hotel business school in Lausanne where I was particularly good at learning about nutrition...
From that time until the present I have continuously been intrigued by the principles of good cooking and nutrition and passionate about the behavior of the human being with food. In the many different countries in which I have travelled to or lived all around the world, I have observed the same desire of people to keep their eating habits and traditions but also to be tempted and confronted by the convenience of the fast food in the modern age. Also in all these many places, there is more and more confusion about food and most of us are still hoping to find the ideal way of eating...
Now more than ever it is time to think with more common-sense about our food-habits ! In spite of all the dieting, 20% at least of American people are currently suffering with obesity; about 60% are over-weight and are paying the side-effects of a long-time misunderstood good nutrition... diet sounds like a punishment. My concept is to teach you about healthy eating without deprivation. This can be accomplished only by understanding, once for all, how to simply choose and eat foods that are both nutritious and satisfying for you. You can remove the concept of punishment by diet and replace it with happier and healthier food choices every time you eat. You can eat chocolate and still have good nutrition ! Consider that you are what you eat, and that what you eat is building your body and your energy.
I can assure you, that after more than 20 years looking for easy ways to make nutrition more interesting and more fun, to EAT WELL does not have to be a chore anymore, it can be simple, tasty and absolutely FOR EVER !
